The Montgueux slope extends for nearly 100 meters, and the due South exposure along with the warmth of the Aube make for quixotically exotic Chardonnays whose opulence is kept in check by the keen minerality and edge of its chalk soils. Emmanuel Lassaigne's father, Jacques, was one of the first to plant this land in the 1960s and the estate remains true to form as the yardstick by which all others are measured in Montgueux. Moreso, It has risen to the occasion as one of the truly cult favorites of the in-the-know Champagne crowd. The wine possesses a lower-pitched, deeper nose than the basic Pernand-Vergelesses above, but with an equivalent limestone intensity more solid in its character than powdered. The palate is richer and thicker as well, but suffused with the alert acidity typical of the Rollin style. Timo moved to the Yarra Valley from his home in Germany with the intent to start something new and focus on incredibly small production, hand crafted wines from traditional French grape varieties. He likes to talk about himself as a humble farmer, but his wines are anything but simple.\u003cbr data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003eTimo started his estate in 2000 with a 2.5 hectare plot known as Bloody Hill, which was aptly named because it is \"bloody steep\" and 300-470 meters high depending on the site. Chardonnay and Pinot Noir were his first plantings, but he has since branched out to Cabernet Sauvignon, Syrah, and Nebbiolo, among others. He was also one of the first in Australia to use 100% whole cluster in his wines, and this Burgundian technique gives his wines a particular perfume and finesse that is hard to achieve in the New World. Well, if you havent heard of  FrÃ©dÃ©ric Cossard, this famous natural winemaker actually was a dairy engineer who made cheese prior to becoming a highly sought after Burgundian winemaker. His philosophy in cheese-making is similar to his winemaking philosophy - pure, well cared for ingredients that are processed using minimal intervention, therefore allowing the final product to be demonstrative of the quality of its parts. Unlike many of his peers, FrÃ©dÃ©ric was not born into a winemaking family - he had to start his winemaking journey from scratch, no mean feat in Burgundy! His estate, Domaine de Chassorney, was created in 1996 and started with a few hectares of vineyards in the villages of Saint Romain and Auxey-Duresses. It has grown since then, and now covers 10 hectares across several villages.  FrÃ©dÃ©rics approach to winemaking is rooted in a more natural approach: this involves organic viticulture, spontaneous fermentation, whole cluster, as well as an emphasis on concrete and Georgian quevri instead of new oak. FrÃ©dÃ©ric also makes wine as a negociant under his own Frederic Cossard label. These wines are equally as good as those made under his Chassorney label, as Cossard works hand in hand with each individual grower to ensure that the vines are managed to his exacting standards. Winemaking duties for the new estate, Domaine Belargus, are handled by Adrien Moreau, who has studied under Haut-Brion, Cheval Blanc, and Roederer. definitely been enjoying a moment over the last few years, with more and more producers dipping their toes into the proverbial orange waters. Few producers, however, hold the clout in the orange and natural wine communities the way that Friulian producer Radikon does. Although most casual consumers are unfamiliar with these wines, they epitomize a level of truth, beauty, and transparency that is constantly sought after by wine lovers every time they open a bottle. Radikons wines are interesting and complex, and heavily influenced by their proximity to Slovenia, utilizing techniques such as hand harvesting, extended skin maceration, no added yeast or enzymes, and most notably, all wines are fermented in large, old barrels without any temperature control. One can easily understand why many a natural wine geek has fallen prey to the siren song of Radikon, but while these are very much technically natural wine (as if that was a clearly definable term) be not afraid! These wines have ageability, tension, and nuance, and there is a reason that these wines still are heavily sought after even by those who wouldnt consider themselves natural wine aficionados. If the New York Times writes a glowing article about a wine, you can gamble that they are probably at least worth knowing about and probably not *too* weird. They are however, very much in the nerdy category and if you consider yourself an orange wine fan and have never had this OG orange wine? Well, today is the day. As a bonus, they also produce a Merlot\/Pignolo blend that is absolutely worth trying if you feel like playing with a little bit of red wine.\u003c\/span\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eOne of the more curious things about Radikon is that early on the estate focused on producing more conventional wines. Practices such as fermenting in stainless steel and aging in French oak were commonplace. In an interesting (and dare we say, fortuitous) twist of fate, Stanko Radikon found he didnt particularly like them, and thus began his journey back to making wine the way his grandfather used to. This fits in line with the history of the state, many of whose wines were planted in the 1940s and 1950s. While unfortunately many of the vines were wiped out in a mudslide in 1997, some of the older vines survived. This in combination with the old school winemaking results in something truly magical. Radikon explains from their website, \u003c\/span\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003cem data-mce-fragment=\"1\"\u003eIn the cellar, the grapes are destemmed and then macerated on the skins for 30 days more, with experimentation of 6\/7 months for the whites, and 35 days for the reds. The pressing is done softly using a pneumatic press. All phases of the vinifications are in Slavonian oak barrels, first in wood vats and then in large barrels in which the wines are aged for about three years before bottling. The vinifications are done using only the natural yeasts present on the grapes. There is no sulfur added at vinification or bottling.\u003c\/em\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eSince Stanko passed away in 2016, operations have passed into the hands of his son SaÅ¡a, who is now the driving force behind the family estate. He continues on in the tradition of his father, following the same philosophy in his winemaking and farming. One new development, however,  involved the introduction of the \"S\" or \"SaÅ¡a\" wines. This concept emerged in the 2010s, and was an avenue that allowed SaÅ¡a to explore his individual path and try something new while still staying true to the spirit of the estate. These wines undergo a notably briefer period of maceration, ranging from 8 to 14 days as opposed to the previous three months. They undergo fermentation in smaller containers and are aged for a mere 18 months prior to being bottled. Additionally, they are packaged in the traditional 750ml bottles and receive a slight infusion of sulfur during the bottling phase, whereas Radikons traditional wines are bottled in 500 ml and Liter bottles, as Stanko Radikon believed these were more appropriate sizes. Two people may, he reasoned, want to drink both a white and a red with dinner, and with a 500 ml bottle it is far easier to justify opening a white and a red than if you are working with the traditional 750 ml bottle. Presently, this new project's wines constitute approximately 55% of the estate's overall production, and are designed for more youthful consumption. My visits to Mugnier are one of my most cherished, not only because of the wines but because our conversation habitually meanders into related topics upon which he does not pull his punches. Today, we speak about the current frenzied demand for Burgundy and how it has changed the regions spirit, the spectre of global warming that clearly plays on his mind and the essence of what a Burgundy wine ought to be.\u003c\/p\u003e\n\u003cp\u003eThe year was relatively cold and rainy, which made the work in the vineyard more difficult, he continues. We had to make sure we sprayed at the right time against mildew, which was not easy. We only sprayed copper and sulphur, though Im not organic, and that included weekends. Its good to have a tractor that is not too heavy but remains light enough with good spraying capability. For that, you need a turbine, and turbines are heavy. We didnt have too much damage from mildew. It was not easy to reach full maturity, and in the end, it became a competition between ripeness and rot. There are many vintages like that, and the wines turn out to be delicious, delicate and seductive. I think 2021 is that kind of vintage. They say: vines must suffer to make great wine. But I think its the\u003cspan\u003e \u003c\/span\u003e\u003cem\u003ewinemaker\u003c\/em\u003e\u003cspan\u003e \u003c\/span\u003ethat must suffer. People evaluate wines after a year. Look at all the restaurants in Beaune with 2020 Grand Crus and all their lists [Mugnier rolls his eyes and sighs]. I judge my wines on how they taste after ten years.\u003c\/p\u003e\n\u003cp\u003eWe started the picking on 16 September, and the sanitary conditions for the bunches were fine. My crop is comparable in volume to recent vintages. We cropped at 25hl\/ha, whereas average is 35hl\/ha, and alcohol levels reached around 12.5%, just the Chambolle Village was chaptalized a little. Early samples that we take for analysis are often lower [in potential alcohol], but the final degree is often one degree higher than expected, so I end up wondering why I chaptalized in the first place.\u003c\/p\u003e\n\u003cp\u003eIn many ways, 2021 is the kind of growing season that might throw obstacles in the way of Mugnier, but the style sutures neatly with his style of wine.
