With a family legacy of winemaking in Germany that goes back over 400 years, you would think he would be happily making Riesling, but instead he is making some of Australia's most exciting Chardonnay, Syrah, and Cabernet Sauvignon. Timo moved to the Yarra Valley from his home in Germany with the intent to start something new and focus on incredibly small production, hand crafted wines from traditional French grape varieties. He likes to talk about himself as a humble farmer, but his wines are anything but simple.\u003cbr data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003eTimo started his estate in 2000 with a 2.5 hectare plot known as Bloody Hill, which was aptly named because it is \"bloody steep\" and 300-470 meters high depending on the site. Chardonnay and Pinot Noir were his first plantings, but he has since branched out to Cabernet Sauvignon, Syrah, and Nebbiolo, among others. He was also one of the first in Australia to use 100% whole cluster in his wines, and this Burgundian technique gives his wines a particular perfume and finesse that is hard to achieve in the New World. Its the only wine label weve ever seen with a pair of baby angels firing Riesling bottles out of a medieval cannon. Whats in the bottle though? The Immich-Batterieberg estate is one of Germanys oldest estates, with vineyards dating back to the year 911 and a cellar dating to the year 870. The estate had been modernized for the last few decades until Gernot Kollman purchased the property in 2009. Hes spent the last decade revitalizing the vineyards and adding soul back into the mix. I love these wines because they are a contradiction of ideas. While they are a literal new kid on the block in a region full of centuries old wineries, the property is one of the oldest in the country. 80% of the vines on the estate are ungrafted and more than 60 years old. They are labelled as trocken, or dry wines, but have this efficacious, perfectly integrated sweetness that lingers beneath and drives the finish. The Escheburg is the best introduction to the estate style, a blend of several estate vineyards creating absurdly delicious dry Riesling with a kiss of hidden sweetness. The Ellergrub is quickly becoming one of the estates cultiest wines, with prices escalating year over year. This 1.4 hectare pure blue slate vineyard from the magnificent 2016 vintage. Hand-picked, foot-trodden, wild yeast and whole cluster fermented for wild, savage flavors of spice and sun-expressed coastal and mountainous herbs and flowers. Well, if you havent heard of  FrÃ©dÃ©ric Cossard, this famous natural winemaker actually was a dairy engineer who made cheese prior to becoming a highly sought after Burgundian winemaker. His philosophy in cheese-making is similar to his winemaking philosophy - pure, well cared for ingredients that are processed using minimal intervention, therefore allowing the final product to be demonstrative of the quality of its parts. Unlike many of his peers, FrÃ©dÃ©ric was not born into a winemaking family - he had to start his winemaking journey from scratch, no mean feat in Burgundy! His estate, Domaine de Chassorney, was created in 1996 and started with a few hectares of vineyards in the villages of Saint Romain and Auxey-Duresses. It has grown since then, and now covers 10 hectares across several villages.  FrÃ©dÃ©rics approach to winemaking is rooted in a more natural approach: this involves organic viticulture, spontaneous fermentation, whole cluster, as well as an emphasis on concrete and Georgian quevri instead of new oak. FrÃ©dÃ©ric also makes wine as a negociant under his own Frederic Cossard label. These wines are equally as good as those made under his Chassorney label, as Cossard works hand in hand with each individual grower to ensure that the vines are managed to his exacting standards. The arrival of Luis Rodriguez's wines immediately became an annual celebration for me.\u003c\/p\u003e\n\u003cp\u003eLuis's winery is situated in the historical Ribeiro zone in Spain's northwestern Galicia region near the Portuguese border. The native grapes he has re-planted are mostly unseen and unheard of internationally, and they're not easy to pronounce; the local language there is Gallego, a language unique to Galicia that sounds like a blend of Spanish and Portuguese. A few hundred years ago, Ribeiro was a dominant wine region, and they sold many of their wines to the English. However, wars (and more wars) stifled the region's viticultural prowess. Rodriguez has ripped up the bulk Palomino and Alicante Bouschet grapes planted over the last century, and his mission has been to restore the primacy of the native grapes: Treixadura, Godello, Lado, and Albariño for whites and Brancellao, Souson, Caiño Tinto and Ferrol for the reds.  Enjoying these wines requires a leap of faith, and it's one I am going to ask you to take. The region's geographical location imparts wonderful food wines with terrific balance from the moderating Atlantic coastline, and its granitic, sandy soils offer sheer mineral character across wines of both colors.
