Beneath Corton€™s majesty, the village has a cooler microclimate whose virtues truly show best in warmer vintages like 2018 and 2019. These wines exhibit the increased weight inherent to the vintage, but possess that streak of acidity and minerality that makes \u003cspan data-mce-fragment=\"1\"\u003e\u003cspan class=\"il\" data-mce-fragment=\"1\"\u003eRollin\u003c\/span\u003e\u003c\/span\u003e€™s wines some of the most reliable values in Burgundy. They're classic Burgundies that aren't marred by oak or overextraction, and the pricing approaches Tuesday night Burgundy level. The wine possesses a lower-pitched, deeper nose than the basic Pernand-Vergelesses above, but with an equivalent limestone intensity more solid in its character than powdered. The palate is richer and thicker as well, but suffused with the alert acidity typical of the Rollin style. I love these wines because they are a contradiction of ideas. While they are a literal new kid on the block in a region full of centuries old wineries, the property is one of the oldest in the country. 80% of the vines on the estate are ungrafted and more than 60 years old. They are labelled as 'trocken', or dry wines, but have this efficacious, perfectly integrated sweetness that lingers beneath and drives the finish. The Escheburg is the best introduction to the estate style, a blend of several estate vineyards creating absurdly delicious dry Riesling with a kiss of 'hidden sweetness'. The Ellergrub is quickly becoming one of the estate's 'cultiest' wines, with prices escalating year over year. This 1.4 hectare pure blue slate vineyard from the magnificent 2016 vintage. Timo moved to the Yarra Valley from his home in Germany with the intent to start something new and focus on incredibly small production, hand crafted wines from traditional French grape varieties. He likes to talk about himself as a humble farmer, but his wines are anything but simple.\u003cbr data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003eTimo started his estate in 2000 with a 2.5 hectare plot known as Bloody Hill, which was aptly named because it is \"bloody steep\" and 300-470 meters high depending on the site. Chardonnay and Pinot Noir were his first plantings, but he has since branched out to Cabernet Sauvignon, Syrah, and Nebbiolo, among others. He was also one of the first in Australia to use 100% whole cluster in his wines, and this Burgundian technique gives his wines a particular perfume and finesse that is hard to achieve in the New World. Ribera del Duero's focus on mostly monovarietal Tempranillo from gnarly, goblet-trained vines that are nearly a century in age makes this region worth a deep dive. Additionally, the top producers' seamless marriage of traditional techniques (made famous by producers in Rioja like López de Heredia) and the lessons of 21st century winemaking science make this region a hotbed of world-class wines worthy and capable of decades of aging.\u003c\/p\u003e\n\u003cp\u003eThe producer who I feel is the most overlooked PERIOD is Viña Sastre. While their Pésus bottling goes for $500-600 and is one of the most adored in all of Spain for savvy insider collectors, the winery remains mostly overlooked in the United States. The Viña Sastre Pago de Santa Cruz is a bottling that is released only in top years in a volume of less than 500 six-pack cases for the world market. The vineyard was planted in 1946, and its ancient vines remain dry-farmed and bush-trained as is traditional. It's a deeply colored opaque style, matured in a combination of used Amerrican and French Oak barrels for five years, resulting in an exuberant and complex explosion of ripe black fruits, wine-soaked cedar and sandalwood, zesty five-spice powder, mocha, and scorched earth. The Regina Vides is even more special. with a 6,000 or less bottle production produced from goblet trained vines with an average age of over 100 years! This cuvée is sort of like the \"baby\" Pésus and sees 100% new French oak. Well, if you haven€™t heard of  Frédéric Cossard, this famous natural winemaker actually was a dairy engineer who made cheese prior to becoming a highly sought after Burgundian winemaker. His philosophy in cheese-making is similar to his winemaking philosophy - pure, well cared for ingredients that are processed using minimal intervention, therefore allowing the final product to be demonstrative of the quality of its parts. Unlike many of his peers, Frédéric was not born into a winemaking family - he had to start his winemaking journey from scratch, no mean feat in Burgundy! His estate, Domaine de Chassorney, was created in 1996 and started with a few hectares of vineyards in the villages of Saint Romain and Auxey-Duresses. It has grown since then, and now covers 10 hectares across several villages.  Frédéric€™s approach to winemaking is rooted in a more €œnatural€ approach: this involves organic viticulture, spontaneous fermentation, whole cluster, as well as an emphasis on concrete and Georgian quevri instead of new oak. Frédéric also makes wine as a negociant under his own Frederic Cossard label. These wines are equally as good as those made under his Chassorney label, as Cossard works hand in hand with each individual grower to ensure that the vines are managed to his exacting standards.  These are wines of elegance and character, and while most of his wine comes from Burgundy, he has experimented using grapes from the Jura, Languedoc and Beaujolais. - \u003cspan
