The Schioppettino di Cialla is the winery's icon wine. Schioppettino was nearly extinct before the Rapuzzis (Ronchi di Cialla's founding family) resurrected it in the Cialla valley in the 70s. Since then, the wine's pedigree has grown to the extent that the Italian government made the Rapuzzi's holdings a legally recognized sottozona in Colli Orientali. You could easily argue that Cialla is now Italy's most important monopole outside of Bolgheri Sassicaia. Winemaking for the Schioppettino includes a month of skin maceration, 18 months in French Barrique and another 3 years of bottle age before release. The wine shows an intense Pinot-like balance of florals and earth wrapped around a core of rustic tannins.
