Per Jasper Morris From Inside Burgundy: "15 year old domaine vines in Fussey, trained high with wide spacing (4,000 vines per hectare). Very toasty nose, a type of reduction. There is a recent 600 litre barrel in the elevage which has provided a lactic touch as well. Fierce acidity. All that sounds rather horrible but actually not at all. The wine is notably persistent and will harmonise."
CHANTERÊVES: GERMAN PRECISION MEETS TRADITIONAL FRENCH WINEMAKING
Since 2010, wife and husband duo Tomoko Kuriyama and Guillaume Bott have built steam for their boutique Chanterêves project at an astonishing pace. The cellar is quaint even for Burgundy standards, located underneath a home in Savigny-les-Beaune. The releases are incredibly small as the estate has less than 5 hectares under production. With the squeeze in Burgundy availability and the fever pitch excitement among Burgundy collectors in-the-know, they've finally reached the dreaded "allocated" status, meaning we only have a few bottles each vintage to share with you.
The pedigree is excellent here. Guillaume was the right hand man at Etienne Sauzet in Puligny-Montrachet before joining Simon Bize in Savigny-les-Beaune. In a testament to Guillaume's talent and incredible drive, he remains cellar master for the Bize estate while also being full-time at Chanterêves. Tomoko met Guillaume at Bize after nearly a decade of experience making wines in Germany with Paul Fürst, Jakob Kühn, and George Breuer. Together they make gorgeously ethereal wines, and the house style is purist and low intervention. Sulfur is used minimally, and the estate treads rare ground between cult classic and quiet revolutionary.
