Sabine strives for her wines to be enjoyable on release but also able to cellar for years, and her focus is to preserve freshness and express the underlying terroir of each parcel. The whites are matured in 228 liter barrique for 10 months (20-30% of which is new), and stirred once a week between alcoholic fermentation and malolactic fermentation to develop texture and concentrate flavors. As for reds, they have a significant portion of whole cluster stem inclusion for freshness and more perfumed aromatics and lean towards the lighter and prettier style of red Burgundy. These are classically styled Burgundies that will please all palates, and the price points for wines of this quality, both in winemaking and terroir is outstanding.
