The house style sits somewhere in the middle between the highly reductive, super flinty wines and old school richer and rounder style. Sabine strives for her wines to be enjoyable on release but also able to cellar for years, and her focus is to preserve freshness and express the underlying terroir of each parcel. The whites are matured in 228 liter barrique for 10 months (20-30% of which is new), and stirred once a week between alcoholic fermentation and malolactic fermentation to develop texture and concentrate flavors. As for reds, they have a significant portion of whole cluster stem inclusion for freshness and more perfumed aromatics and lean towards th lighter and prettier style of red Burgundy. These are classically styled Burgundies that will please all palates, and the price points for wines of this quality, both in winemaking and terroir is outstanding. Domaine Marc Morey's wines sell so quickly we never get the chance to offer them, but thanks to a healthy allocation we are especially excited to share them with you.
91 Points and OUTSTANDING Rating from Allen Meadows of Burghound: A more elegant and much more floral-suffused nose displays notes of green apple and just sliced lemon. There is excellent density to the caressing but decidedly punchy middleweight flavors that also conclude in a clean, dry and bitter citrus-inflected finish. This too would benefit from a few years of keeping in the hopes that better depth will develop.
