The Dauvissats had bought village Chablis vineyards next to their premier crus to give their children a start, and Laurent and Marie-Clotilde made their first wines from them in the Dauvissat cellar before moving to their own cellar in Poinchy. The approach stayed the same: hand harvesting, fermentation in enamel tanks and aging in used oak for some cuvees, on a domaine of about five hectares where daughter Solange leads the winemaking. This is lean, classically built Chablis with a close kinship to Dauvissat, open young and capable of aging well beyond.
