Vau de Vey, local dialect for "little valley," is a left-bank Chablis premier cru where Alice and Olivier de Moor bought 0.92 hectares in 2017, vines planted in 1953 on heavy marl that Olivier compares to the soils of their "Rosette" parcel. Based in Courgis, where Olivier grew up, the couple met at a large Chablis estate where he ran the vineyards; both trained in oenology at Dijon, and they planted their own first vines in 1989. Organic farming since 2005 and no sulfur at harvest or during vinification define the house, along with elevage in Burgundian barrels of varying ages. Louis/Dressner, founded in 1988 by Denyse Louis and Joe Dressner around independent growers working with native yeasts and minimal additions, imports the wines. The marl gives a broader premier cru than the steeper, stonier sites, held in line by Chablis acidity and suited to some years of cellaring.
