Since its acquisition by Philippe and Catherine Pascal in 2004, the estate has undergone a deeply considered transformation. Working with a philosophy centered on precision and transparency, Cellier aux Moines has embraced organic and biodynamic farming alongside a rigorously detailed approach in the cellar, including gravity-flow vinification and parcel-by-parcel élevage to articulate site-specific nuance.


Today, the domaine spans a thoughtfully assembled range of holdings across both the Côte Chalonnaise and Côte de Beaune,including Premier Cru sites in Puligny-Montrachet, Chassagne-Montrachet, Volnay, and Santenay, offering wines that balance classical structure with a distinctly modern clarity.
