Jerome Bretaudeau is one of the most quietly influential figures in the Loire Valley's natural wine movement, farming his vines in the Pays Nantais, the home of Muscadet, with the same obsessive attention to terroir that defines the region's best growers. "La Justice" is a departure from his Melon-focused work: a field blend of Savagnin and Chardonnay vinified in amphora, a vessel Bretaudeau uses to preserve textural detail and oxidative complexity without the intervention of oak. Amphora fermentation encourages micro-oxygenation while maintaining a mineral precision that stainless steel cannot replicate. The result is a wine of unusual depth for its appellation, structured, saline, and layered, reflecting both the grower's philosophy and the Atlantic-influenced soils of the Nantais.
